Here are some recipes for local foods...

 

Bakes

Bakes are a West Indian bread usually eaten at breakfast. The dough can either be baked or fried, however, it is typically fried. Most measurements are not exact, just a general idea of ingredients.

Once the dough is formed, form it into small balls, about 2-2.5 in. in diameter. Flatten them by hand or with a rolling pin. They can either be baked until brown, or fried in oil in a skillet.

Salt Fish Sauce

Salted fish is used very often in Grenada. This is a sort of salad that is usually served on bread.

In order to remove the salt on the fish, boil the fish in water for a few minutes. Discard the water and repeat 3-4 more times. This prevents the fish from being overly salty. Once finished, using a fork, flake fish from bones. Add other ingredients and cook in a saucepan stirring constantly until lettuce and onions are soft. Serve with bread.

Stewed Callaloo (can use recipe with pumpkin also)

Callaloo are the leaves from the dasheen root. When cooked, they have a similar appearance to sauteed spinach. I'm not sure if callaloo can be found in the United States.

If you have access to a blender or food processor, you may chop up the whole callaloo leaf, stem and all. If not, omit the stems. Add all ingredients with a small amount of water in a pot. Bring to boil, and let the ingredients cook down until callaloo has become wilted. Once finished, add mixture into blender or processor and puree until somewhat smooth.

Pumpkin Soup

Pumpkin is very popular in the West Indies. It is fairly easy to come by and it is used in soups and stews.

I make it vegetarian, but you can use chicken in it as well, or chicken broth. Simmer pumpkin in pot with small amount of water. When soft, use potato masher or blender/food processor to puree pumpkin. For a large amount of pumpkin, water may not be needed, however, for a thinner soup, add water. Pour in chopped vegetables, and bring to boil. Lower heat and simmer for a few hours. Add dumplings last 10 minutes of cooking.

Green Pea Soup (Lentil)

I have only made this once. When cooking all the vegetables and peas, I only filled I covered all the ingredients with water. However, since the peas absorb water while cooking, extra water will need to be added later.

Macaroni Pie (Baked Mac 'N Cheese)

Cook noodles as directed. Shred cheese. Mix noodles, cheese, 1-2 tablespoons butter, 1-2 tablespoons flour,and a cup or so of milk together. Pour into casserole dish. Bake!
